welcome world

My husband and I welcomed a healthy baby boy four months ago. Throughout the entirety of my pregnancy I only gained 18 pounds, which I was very happy about because I was not in the best shape of my life when we found out we were going to welcome a new bundle of joy. My food intake was fantastic! I was loving salads, veggies, fruits, a low carb intake, and of course those awesome prenatal vitamins. Something happens to your mind when you are pregnant - how do I explain - you just want so much better for that baby growing inside of your body. It makes you feel empowered to be better.

After baby has been a different story (sort of). I have days of greatness! Days where I eat salads and few carbs, and then I have days where I go nuts. All I want on those days is burgers, fries, heck even Taco Bell. But now, four months postpartum I realize that I shouldn't be treating my body like a garbage disposal just because I am not pregnant anymore. My body is not only important when I am creating life, it is always important.

I hope to go back to my "glory days" of eating well and regaining my love of cooking. In the process, I want to help better my husband's psoriasis. I hope to post at least one recipe a week. Enjoy all the recipes on here! As they say in Spanish, "buen provecho."
